About this Cut

The Australian Wagyu flat iron is another one of our smaller and more affordable cuts from our Australian Wagyu collection. Like the denver steak, it comes from the shoulder of the cattle. This produces a less tender steak, while still bringing a piece that is full of rich, buttery beefy flavor. It tends to be thin cut and cooks quickly, so it is important to watch it closely and avoid overcooking, which can lead to a tougher chew with this one. It is another great option for someone looking for a smaller or more affordable cut.

Cooking Method: Marinate if desired, then grill or broil on high heat quickly due to its thin size. Don't forget to finish it off with any one of our four special JPM kosher salts. 

Recommended Temperature: 135°F (57°C) for medium-rare.
