Stone Axe farms is the highest level of premium beef coming out of Australia, and this T-Bone is one of the most special cuts we carry due to its exclusive bloodline and limited availability. If you are looking to indulge in something truly special, then this is the cut for you. The T-Bone consists of a New York strip and small portion of filet separated by a bone, which adds even more flavor. When cooking this highly marbled 20 oz. T-bone steak, the key is to leverage its rich fat content while achieving a perfect sear and optimal doneness. For an extra touch of indulgence, consider topping the rested steak with a pat of herb butter or a complementary sauce like chimichurri.

Cooking Method: Sear over high heat in a cast iron pan or grill and cook for 2 minutes on each side. This steak is fairly thin so it should cook quickly. It is important to let it come to room temperature before cooking, which will allow the fat to break down and render perfectly.

Recommended Temperature: The goal is to pull the steak at around 125°F for a perfect medium-rare, which allows the marbled fat to render and create incredible flavor and tenderness.
