About this Cut
Secreto Iberico is a shoulder cut from the Spanish acorn fed Iberico pigs. Secreto comes from the outside of the shoulder, and resembles skirt steak, but has the tenderness of ribeye cap. This cut is loaded with natural flavor and needs minimal seasoning. It comes beautifully marbled and is a great option from our Iberian pork selection.
Cooking Method: Best grilled or seared over high heat. This "secret" cut is marbled and should be cooked quickly to medium-rare to keep it tender.
Recommended Temperature: 145°F (63°C) for a perfect balance of tenderness and safety.
