Presa is one of the finest cuts from the Spanish acorn fed iberico pigs. It comes from the head of the loin attached to the shoulder and has incredible marbling similar to Wagyu beef. This is the perfect choice for slow cooking and is ideally served medium to medium-rare. This pork is one of a kind and something everyone needs to try at least once in their life.

Cooking Method: Best cooked on high heat for a short time. Grill or pan-sear to capture the rich flavors.

Recommended Temperature: 145°F (63°C) to maintain moisture and tenderness.
