About this Cut
Our USDA prime porterhouse is one of the larger cuts we carry, and definitely a special one compared to our other cuts. It is comprised of a New York Strip and a filet mignon separated by a large "T" shaped bone. Not to be confused with our T-Bone steak which is almost twice as big, this 32oz bone-in cut offers the best of both worlds. On one side you get the flavorful taste of the New York strip and on the other the lean tender meat of the filet. A perfect steak for anyone with a big appetite looking to try one of the most popular and impressive looking steakhouse cuts.
Cooking Method: The Porterhouse, which includes both a strip and a tenderloin, should be grilled or broiled. Season well and start on high heat to sear, then reduce to medium to finish cooking without charring.
Recommended Temperature: 135°F (57°C) for medium-rare. Due to its size and varying thickness on each side, monitor both the strip and tenderloin for different doneness.
