About the Cut

Iberico Entraña is essentially pork skirt steak from Spanish acorn fed iberico pigs. The meat from iberico pigs is more flavorful, juicer, and very distinctive compared to traditional pork such as Duroc or Cheshire. This cut comes in long fattier strips known for its incredible flavor rather than tenderness. The meat from this pigs is a deep red color, and has a rich nutty taste with fat marbling that creates and extremely flavorful cut. This is some of the best quality pork we carry and something every pork lover must try.

Cooking Method: Best grilled over high heat, quickly seared on both sides to char yet keep the inside juicy.

Recommended Temperature: 130-135°F (54-57°C) for medium-rare.
