About the Cut
These pieces are chicken breast that has been cut in half horizontally to make two thinner pieces. Often, the cutlet is also pounded out to make it even thinner so it cooks even quicker and more evenly. Our chicken is free range, air-chilled, and antibiotic and hormone free making in one of the healthier and better tasting chickens out there. Each packet is 1 pound with each cutlet weighing approximately 5oz.
Cooking Method: Best pan-fried or breaded and fried. Cook on medium-high heat until golden brown and cooked through. Perfect for dishes like chicken parmesan or pollo a la plancha.
Recommended Temperature: 165°F (74°C).

Air-Chilled Chicken
All of our chicken is air-chilled, which refers to a method where individual birds are cooled using cold air, instead of the traditional water chilling. This process minimizes the absorption of water, preventing dilution of the chicken’s natural flavor and resulting in a firmer, more textured meat. Air chilling also enhances the skin’s ability to crisp up when cooked, making it ideal for roasting or frying. Additionally, because there’s no water absorption, the natural flavor of the chicken is more pronounced and the meat is typically more tender. Air-chilled poultry is also considered more hygienic and environmentally friendly, as it reduces water usage and potential cross-contamination in the chilling process.
