About this Cut

Japanese A5 Filet Mignon is a top-tier premium cut from the tenderloin, a muscle of the cow that does minimal work, resulting in an exceptionally tender steak. This filet sourced from Japanese Wagyu cattle and graded A5 offers the highest level of quality for Wagyu beef. It is the perfect cut for someone who enjoys a softer texture paired with an unforgettable rich buttery flavor that is signature to Japanese A5 Wagyu. The 4 oz portion is ideal for anyone looking to try Japanese A5 Wagyu for the first time.

Cooking Method: Due to its tenderness, sear the filet on high heat for a short time. Season simply with one of our unique kosher salts, and quickly sear on all sides in a very hot skillet. These filets are also perfect for sashimi or nigiri. Flash sear with a blow torch and top with truffle sauce for a top-tier sushi experience.

Recommended Temperature: 125°F (52°C) for medium-rare, ensuring it remains tender and juicy.

A5 Grade

A5 Wagyu stands as the zenith of beef excellence, a symbol of unrivaled luxury in the culinary world. This prestigious designation is reserved for the highest grade of Japanese Wagyu, distinguished by its extraordinary marbling, which creates a buttery texture and rich, umami-packed flavor that is unparalleled. The "A" signifies the highest possible rating for yield quality, while the "5" represents the apex of meat quality, encompassing marbling, color, brightness, firmness, and texture. This level of marbling ensures that A5 Wagyu melts at a lower temperature, providing a melt-in-your-mouth experience that is both decadent and sublime.

The meticulous care and tradition behind the breeding and feeding of A5 Wagyu cattle, including specialized diets and stress-free environments, contribute to the beef's exceptional quality. This dedication to perfection makes A5 Wagyu a coveted delicacy among gourmands and chefs worldwide, sought after for its ability to elevate any dining experience to the realm of the extraordinary. Its rich flavors and tender texture make it ideal for a minimalist preparation, allowing the natural qualities of the meat to shine through. A5 Wagyu is not just a meal; it's a gastronomic event, offering a taste experience that lingers in memory long after the meal has concluded.

Antibiotic and Hormone-Free Beef

All of our cows are raised free of any hormones or antibiotics. This practice ensures that the meat is as natural as possible, reducing consumer exposure to these substances. The absence of antibiotics in the raising of these animals helps prevent the development of antibiotic-resistant bacteria, a significant benefit for public health. Additionally, hormone-free meat often has better taste and quality. By choosing antibiotic and hormone-free meat, consumers support more natural animal husbandry practices and contribute to a healthier environment, while also enjoying safer and more flavorful meat.
